Menu Plan Monday - Pantry Challenge

It's Sunday and I'm planning my menu for the week. I can't grocery shop until DH gets paid on the 1st so I'm trying to stretch what we have in the pantry and freezer.

Here's our list of Dinners for the week:

Sunday - Breakfast for Supper - Scrambled Eggs and Toast with Grape Jelly
Monday - Honey Mustard Chicken, Rice, Brocoli
Tuesday - BBQ Pork Sandwiches, HotDogs, Baked Beans, Carrot/Celery Sticks
Wednesday- Spaghetti with Meat Sauce & Homemade Bread
Thursday - Crockpot Cubed Steak and Gravy, Mashed Potatoes, Green Beans
Friday - London Broil, Roasted Potatoes, Salad
Saturday - Leftover Buffet or Takeout (We are having a tag sale this day)

Lunches will be turkey, chicken salad, tuna salad, egg salad sandwiches or leftovers. I made waffles this morning for the freezer and the kids and I are making peanut butter cookies this afternoon. I'd also like to make this Bisquick Quiche for DH to bring to work for breakfasts as well as some banana mini muffins. I have all the ingredients I need either in the fridge, freezer or pantry.

    Thanks for the compliments on my menu. Hopefully we can get through the week with just using the pantry (ok I had to get coffee and TP today!!) I also have gotten a lot of great ideas from the MPM participants. I left a comment on your site about LiveOps - thanks for sharing that experience on your site.

  3. That is an amazing pantry menu! I'm working on building my pantry and freezer but there is not much to it yet. :) Good job!

  4. Thank you Amanda. If you see my Leftover Queen post you'll see I had a lot to work with as far as re-created leftovers. Keep working on that pantry and freezer - it really helps during those times that money is slim or if you just get too busy to shop.
